It’s so nutty…

I came across this paleomazing blog by one Crunchy Hot Mama the other day. She is such an inspiration. There is this recipe — well, there are hundreds — but one I just couldn’t resist and had to make tonight for dessert.
Apples, bananas, and nuts oh my.
These are by far some moist, fluffy, wholesome drops of sweet yumminess. And I have to tell you over half of them were gone before they even cooled.
Here is the recipe I used: I added a few extra items
- 2 bananas, smashed
- 1/3 cup coconut flour
- 3/4 cup almond butter
- 1/2 tsp baking soda
- 1/3 cup raw walnuts, chopped
- 1/4 cup of raw almonds, chopped
- 1/4 cup of raw sunflower seeds
- 1 apple, finely diced
- 1/3 cup coconut milk
- 1 Tbsp cinnamon
- 1/2 cup of finely shredded unsweetened coconut
- 1/2 cup dark chocolate chips
1. Preheat oven to 350ºF.
2. In a medium-sized mixing bowl, use a fork to smash the bananas.
3. Add the coconut flour, almond butter, and baking soda, and mix well. Using a handheld chopper or food processor, chop the walnuts, almonds, and apples to a very fine dice.
4. Add the walnuts, almonds, sunflower seeds, apples, finely shredded unsweetened coconut, dark chocolate chips, coconut milk, and cinnamon to the bowl and mix well.
5. Recommend two non-stick cookie sheets. Spoon heaping tablespoons of the cookie mix onto the non-stick cookie sheets, placing an inch or two apart. Bake for 25 minutes. Makes approximately 20-22 cookies.

Last weekend was bitter-sweet for this lil gay. I had to miss out on one of my close friends turning 40. Sadface.com/me
I hear she had a fabulous “Hampton’s” themed pool party. Which means my birthday pool party coming up HAS to be trashy. BTW Jennifer still waiting on pics from your party… I missed out on the festivities because I worked a couple of promotions that weekend with Studio-D Productions. I loved working with them and can’t wait to work more in the future.
Those two events took up my Friday and Saturday nights…leaving me wide open for Sunday to celebrate my sister in-law’s 40′th birthday. Which brings me to the bitter-sweet. I hate that I missed Jennifer’s birthday but I’m glad I was finally able to do something with the Wilson Women. Chris and I have been together 8 years and this is the first time I’ve been able to participate in one of the girl outings. I really hope we do more of these outings. I may have to start planning a monthly out and about for us…I just had so much fun. Talk about ending the weekend on a high note.
I almost didn’t make it to the Sunday party though. My Saturday ended with me getting home around 5am. (Don’t ask.) Only to be woken up by Christopher at 9:38am reminding me I had a birthday party to attend at one of my favorite lil hot spots. I leapt out of bed in search of my phone. I had planned on riding in the car with all the ladies so I could DRINK my brunch. And the sin wagon was pulling out at 10am with or without this diva. I had to let them know I was on my way. I was showered, shaved, and styled before 10am. Thankfully I made it in time to catch my ride even if I did look a lil hung over. Praise glitter for big sunglasses.
While I would love to provide you with vivid details of said birthday party…I succeeded in drinking my brunch, I laughed so hard I cried not once but multiple times, and I performed in DRAG. Yes. In drag. Couldn’t you just die to witness this in person. You are in luck. Below are a collection of videos I took and I saved the drag one for last.
